I wonder if the via cava roads were built for a similar reason as the roads in pompeii? Water flow through those narrow roads, while supplying a dry place to walk. Seems like theres enough erosion on the rock cut walls/rooms to have eroded away the edges of the walks as well. Or even wooden walks above that of course disintegrated, but that would allow water drainage or even sewage to flow underneath without getting your feet in it.
